Hello and welcome to the weekend. I love Saturdays and I am delighted that this is the first in February – the month of love and pancakes with both Mardi Gras and Valentine’s Day. So let’s talk about love. Yesterday we prepared a lot of dishes for Valentine Bristol San Carlo restaurant preview release, so that love is definitely in the air! I am a guest in Livvy and Chrissie Twelve O’Clock Show on BBC Radio Bristol, where we could also talk about Valentine dishes today.

banana pancakes with strawberries
? 225g wholemeal flour
? 3 teaspoons baking powder
½ teaspoon sea salt
ground cinnamon 1 teaspoon
? ½ teaspoon freshly grated nutmeg
? 2 large, ripe bananas, mashed
1 teaspoon vanilla extract
400 ml of skimmed milk
Butter, for frying
Servings: 2 Preparation: 10 minutes
Cooking time: 15 minutes
In a large bowl, combine flour, baking powder, salt, cinnamon and nutmeg.
In a separate bowl, mix bananas, egg, vanilla and milk then whisk to combine.
Make a well in center of dry ingredients and pour the wet ingredients. slowly stir everything together to form a soft dough.
Heat a large skillet or frying pan and melt butter. Reduce heat to medium and add a ladle of pasta to the skillet. Cook until bubbles begin to appear on the surface of the cake, then flip and cook the other side for another minute. You must have enough mass to make six crepes.
Serve warm with strawberries and pure maple syrup. Or why not experiment with ingredients? Cherries and yogurt, or black chocolate chips both work well.
