haddock Mornay

food675g fillet of haddock
150 ml fish stick
300 ml of milk
45g butter, a little more for greasing
45 g of wheat flour
115g Cheddar cheese, grated
250 g spinach, chopped
nutmeg, a pinch
60 g of fresh wholemeal breadcrumbs
2 tablespoons chopped parsley
60 g Parmesan cheese, grated
Haddock mornay recipe
1) Cut the haddock into four pieces and place in deep pan.
2) Pour on the stock and milk and bring to a boil. Reduce heat, cover and simmer for 6-8 minutes.
3) lifting fish from pan and keep warm, reserving the poaching liquid.
4) Melt the butter in a saucepan and add flour until smooth. Cook for 1 minute, stir in the poaching liquid until well combined.
5) Stir until sauce thickens. Add the cheddar cheese until melted, season and remove from heat.
6) Place the spinach in a saucepan, cover, simmer for 1 minute until soft.
7) Add the nutmeg, transfer, shallow, greased ovenproof dish. Preheat the grill.
8) Place the haddock in spinach and pour over the cheese sauce.
9) Mix the bread crumbs, parsley and Parmesan cheese and sprinkle over the sauce.
10) Place under broiler until golden.
